Game of Throneshas never established how much time has passed between Season 1 and Season 8, but we've gotten a few clues along the way about how old all of the major characters are.
For instance, in the pilot, Bran (Isaac Hempstead Wright) is confirmed to be 10 years old, while Sansa (Sophie Turner) openly confirms to Cersei (Lena Headey) that she's 13. We can also extrapolate that because 17 years have passed since Robert's Rebellion in the pilot, Jon Snow (Kit Harington) and Daenerys Targaryen (Emilia Clarke), who were both just born as Robert was seizing power in Westeros, are probably around 17 years old at the start of Season 1. These ages wildly differ from the novels, but that's probably for the best considering the mature content of the story. Arya Stark (Maisie Williams) also states in Season 1 that she's 11.

Meanwhile, Tyrion (Peter Dinklage) stated in Season 2 that Cersei was 19 when she married the newly-minted King Robert Baratheon, so when you add 17 years to that, you get 36 as her age in the pilot. We also know that the Lannisters' mother died giving birth to Tyrion, and thanks to a drunken rant from Cersei during the Battle of Blackwater, we know she was a 4-year-old girl when that happened. Thus, Tyrion is four years younger than twins Jaime (Nikolaj Coster-Waldau) and Cersei, making him 32 in the pilot.
Other major characters like Brienne of Tarth (Gwendoline Christie) or the Hound (Rory McCann) leave us no such clues in the narrative about their ages, so we can only speculate that they're all in their 30s or 40s like most of the "adult" characters on the show.

The passage of time on Game of Thrones tends to be vague and immeasurable most of the time, but fans tend to agree that each season marks the passage of one year of time. That would mean about 7 years have passed since the pilot. Occasionally, you'll find continuity errors with this math, like when Sansa tells Tyrion she's 14 on their wedding night in Season 3, when math would suggest she should be 15 by then, but for the most part we can assume that one year of TV time equaled one year on the timeline.
