4 Episodes 2018 - 2018
Episode 1
Thu, Oct 11, 2018
Samin travels to Italy to explore the importantance of fat in food; including olive oil, dairy fat (in the form of parmesean cheese), and animal fat (pork).

Episode 2
Thu, Oct 11, 2018
Samin splits her time between home and Japan to learn (and teach) about the many layers of flavor added by salt; including traditionally made soy sauce, miso, and sea harvested salt.

Episode 3
Thu, Oct 11, 2018
In the Acid installment of Salt, Fat, Acid, Head, Samin Nosrat travels to the Yucatán to explore the many citrus varieties native to the region and the multitude of options for adding acid to a dish. This is a curious episode compared to the first two as while there are some interesting hosts and hostesses for Nosrat on her journey, the episode is both light on cooking teaching (with instead a shallow background on acid concepts) and seems to venture into the concept of spiciness more than acidity (which clouds the lesson). Not a poor offering by any means, but a more in depth exploration how to evaluate and use various acid components would have been more interesting and more practically useful.

Episode 4
Thu, Oct 11, 2018
Samin travels back to the restaurant where her cooking career began in California to explore the importance of mastering heat in cooking and even includes her mother in the cooking.
