Preparations begin in the fall and continue right up to the first trickle of tree sap in the spring right up to the frenzied last minutes before the doors open. This eight-part series unveils the workings of the sugar shack and takes us into the laboratory of flavour that Martin Picard has created. Be a part of the research and the experiments that his expert team must conduct to maximize the gastronomic experience at the shack.
