Young cowboys, the ranch foreman and cook arrive to sort out their new living quarters on a Texas ranch house of the 1860s, and prepare for the arrival of a California family who will act as the owners of the ranch.

Tensions arise between the ranch foreman, nicknamed "The Colonel",and other ranch employees, and eventually the ranch owner replaces him. Meanwhile, the family struggles with providing enough food for the hands.

The food situation for the ranch hands becomes increasingly desperate and three men get sick. Tensions develop between the ranch owner and the cook as the cook's poor kitchen hygiene is blamed. Meanwhile, ten horses are stolen by rustlers and the cowboys ride out to rescue them.

Ranch residents receive important and welcome visitors: a freight wagon bringing much-needed provisions and a squad of Buffalo Soldiers looking to buy cattle to supply the local fort.

Ranch owner Mr. Cooke delivers a blistering screed to the cowboys in regards to their lackluster job performance. Mrs. Cooke decides she doesn't need housemaid Maura around the house, and hatches an audacious plan to train Maura as an extra cowhand - to the cowboys' great dismay.

The cowboys continue to round up stray longhorns and almost have enough for the 50-mile cattle drive to the Buffalo soldier fort that agreed to buy them. But a band of Comanches show up at the ranch, wanting to make their own deal for the cows.

The cowboys prepare for the cattle drive. Mrs. Cooke plans a fandango dance and feast to give them a proper send-off. Shaun the camp cook works through the night to ready the chuck wagon for the drive, while foreman Robbie tries to figure out what to do with new cowhand Maura.

The cattle drive to the army fort begins in earnest and the cowboys spend long hours in the saddle herding 130+ cows across open range. At journey's end, Mr. Cooke negotiates a good price for his cows with the army and the cowboys are elated. But back on the ranch, Mrs. Cooke and her daughters struggle to get the ranch in shape for a visit from historical assessors, who will determine whether the ranch is economically viable under the Cooke family's management.
