Episode 1
Follow Rachel as she discovers how Swedish cooking is both resourceful in using what nature has to offer and maximising its shelf life. These are cooking methods that have played a crucial part in Swedish cuisine. During her journey through Sweden Rachel meets Lena Embertsen, previously a chemical engineer now turned master in conserving all kinds of edible Swedish forest finds. Together they pick spruce shoots to make into a wonderfully aromatic oil and Rachel learns more about how other ingredients from the Swedish nature can be transformed.

Episode 2
Rachel explores Sweden's love for the humble sausage, where there is a long tradition of hotdog stands and sausage making. Rachel visits an old school grill in Stockholm, and tries the unusual combination of hotdog and prawn salad, an experience that gives her inspiration for a Swedish influenced 'surf-n-turf'.

Episode 3
As autumn approaches Rachel heads into the woods in search of mushrooms. The foraged forest mushrooms become the base for a mushroom risotto - using pearl barley instead of rice - a truly Scandinavian take on an Italian classic. Rachel also meets an ice-cream maker in Stockholm who inspires her to experiment with unusual flavours as she makes a lemon and dill parfait. The cold, crisp air and the rustic country cabin invites Rachel to make a heart-warming soup. Pea soup in Sweden uses yellow peas and is almost always eaten with mustard. Rachel shows us how easy this filling and tasty soup is to make.
