Anne Burrell brings owner Joe Faro 4 candidates who are tested on their Italian scratch cooking skills and their knowledge of Italian regional cuisine. After a dramatic turn of events sends one candidate home in tears the 2 final chefs are each handed the keys to the restaurant for a dinner service. One chef's service gets off to a bad start and must dig their way out while the other struggles with consistency and must please a special VIP table to turn it around. Owner Joe Faro is left with a tough decision as to who to hire as Tuscan Kitchens next Executive Chef.

Legendary restaurant, Mirabelle, on the Sunset Strip has just completed a renovation and is struggling to find an executive chef that can help them complete their new vision. Anne Burrell brings in four candidates to compete for the position. The chefs are tested on their ability to work with the scraps/trimmings of high-end ingredients and then tasked with creating a new identity for Mirabelle's menu. The final 2 chefs face the ultimate test of running the kitchen for a night. One chef battles nerves while the other has to course correct in the middle of service to solve consistency issues. In the end, only one can be chosen to usher in the new era of this legendary restaurant in the heart of Hollywood.

One chef has to trash an entire dish & struggles with extremely long ticket times while the other has trouble leading the staff & taking control of their kitchen.

Anne Burrell brings in 4 candidates who are challenged to create a gourmet version of a traditional but homely Puerto Rican dish and asked to come up with a signature "sexy" dish for Oceano's menu. The 2 remaining chefs face the toughest test of all, running a dinner service for an evening. One chef has to stave off a kitchen staff mutiny during service while the other makes an executive decision that turns their hopes around. One chef walks away with a new job as the next Executive Chef of Oceano.

The chefs are tested on their use of a difficult gulf coast ingredient as well as their ability to handle quantity & consistency when they're asked to create a dish and plate as many as they can in 1hr. When the final two chefs are each handed the keys to this expansive restaurant for a dinner service they're given the added challenge of creating food for a separate special event on the restaurant's second floor. One chef must re-work an entire dish just as customers are entering the dining room and the other must overcome poor communication with his staff to finish his service. It's a big job for a big restaurant and only one walks away with the title of Executive Chef.
