After a four-course, head-to-head competition — complete with dessert — Kevin Sbraga was crowned Top Chef's Season 7 champ, besting Ed and a sick Angelo.

TVGuide.com caught up with the 31-year-old New Jersey native (after a long night of celebrating) to find out what was going through his head when Padma Lakshmi announced the big news, what he had to say about Angelo sitting out the first day of the challenge, and if he had any regrets about what he said or did to the other cheftestants. Plus: Did he name his newborn son after Angelo? Find out!

TVGuide.com: What was going through your head when Padma announced you were the winner? You seemed shocked.
Kevin Sbraga:
I mean, my whole life was flashing in front of me. My dream was coming true. It was a goal I set out for, and I couldn't believe it was really happening.

TVGuide.com: What was it like knowing Angelo couldn't compete on prep day and Hung had to pull all the weight?
Kevin:
I was disappointed he couldn't take part in the first day. I wanted him to be a part of it. He came all the way out there and I wanted him to be 100 percent.

TVGuide.com: How was it working in the kitchen with the previous winners serving as the sous chefs?
Kevin:
It was great. There was a lot of positive energy in there, and I've worked with Mike [Voltaggio] before and I've also worked with Hung [Huynh] as well. I was lucky having worked with Mike especially because it was pretty natural.

TVGuide.com: You've said some critical things about other contestants during the confessional interviews, and even exploded at Alex following Restaurant Wars. Any regrets?
Kevin:
No regrets. I think that's part of my personality. I try to stay calm and be politically correct, but it doesn't always happen. I guess, for me, it was better to say things to their faces than behind their backs.

TVGuide.com: You and your wife welcomed a baby boy — Kevin Angelo — whom you refer to by his middle name. Did Angelo from the show influence your name selection?
Kevin:
Not at all. Not even a little bit! We didn't have it planned out, but it was the name we both liked. When we first started to tell people what the name was, they were giving us a hard time. But the hell with it — we liked it, so we went with it.

TVGuide.com: What's the plan for the big prize money?
Kevin:
Most of it I'm going to use as seed money to start my own restaurant, probably in Philadelphia. It's just going to be a small place, probably under 40 seats and more towards the high-end.

TVGuide.com: How has your life changed since your experience on the show?
Kevin:
Well, right now I'm getting make-up put on — so that's a big difference. [Laughs] I get recognized a lot and I'm not used to it, but I'm really enjoying it all.
